  1. Cut the beef brisket into cubes. Heat the olive oil in a heavy-bottomed pot, and add meat. Brown the meat on all sides. Add salt and pepper to taste. Add enough hot water to cover the meat, bring to the boil, and with the lid on, simmer for 2 hours until the meat is very tender. Add more water if needed.
  2. Add all the other ingredients and simmer slowly until the carrots and potatoes are tender. (approximately 40 min) Serve with rice.
